Description

A quick and healthy orange chicken that’s bright, slightly sweet, and cooks in just 30 minutes, perfect for busy nights.


Ingredients

  • 1 lb chicken breast, diced
  • 1/2 cup orange juice
  • 2 tbsp soy sauce
  • 1 tbsp cornstarch
  • 2 tbsp honey
  • 1 tbsp garlic, minced
  • 1 tbsp ginger, minced
  • 1 tbsp vegetable oil
  • Salt and pepper to taste
  • Chopped green onions for garnish


Instructions

  1. In a bowl, mix together orange juice, soy sauce, cornstarch, honey, minced garlic, and ginger to create a marinade.
  2. Add the diced chicken to the marinade and let it sit for about 10 minutes.
  3. Heat vegetable oil in a pan over medium heat.
  4. Add the marinated chicken to the pan and cook until the chicken is golden brown and cooked through, about 5-7 minutes.
  5. Pour any remaining marinade into the pan and cook for an additional 2-3 minutes until the sauce thickens.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with chopped green onions.

Notes

Serve over white or brown rice and add steamed broccoli or a green salad for a complete meal. Store leftovers in an airtight container for up to 3-4 days in the fridge or freeze for up to 3 months.
