Description

A delightful Almond Cream Cake with rich flavors of almonds and creamy frosting, perfect for any occasion.


Ingredients

  • 1 cup almond flour
  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1/2 cup butter, softened
  • 4 eggs
  • 1 tsp vanilla extract
  • 1 tsp almond extract
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup heavy cream (for frosting)
  • 2 tbsp powdered sugar (for frosting)
  • Sliced almonds (for garnish)


Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla and almond extracts.
  4. In another bowl, whisk together almond flour, all-purpose flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until well combined.
  6. Divide the batter evenly between the prepared pans and smooth the tops.
  7. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  8. Let cakes cool in pans for 10 minutes, then turn out onto wire racks to cool completely.
  9. For the frosting, beat the heavy cream and powdered sugar until stiff peaks form.
  10. Once the cakes are cool, frost the top of one layer, place the second layer on top, and frost the top and sides.
  11. Garnish with sliced almonds. Serve and enjoy!

Notes

Make sure your butter is softened to room temperature for easier creaming with the sugar. You can add a layer of raspberry or strawberry jam between the cake layers for a fruity twist.
