Ingredients
- 1 cup ricotta cheese
- 1 cup almond flour
- 1/2 cup sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- Zest of 1 lemon
- Powdered sugar for dusting
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a large bowl, mix the ricotta cheese, sugar, and eggs until smooth.
- Add the almond flour, baking powder, salt, lemon zest, and vanilla extract; mix until well combined.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Let cool for 10 minutes before transferring to a wire rack.
- Dust with powdered sugar before serving.
