Description

Delightful cookies that capture the essence of fall with cinnamon, nutmeg, and fresh apples, perfect for gatherings or snacks.


Ingredients

  • 1 cup unsalted butter (softened)
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/4 cup apple cider
  • 1 tsp vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1 cup diced apples
  • 1/2 cup powdered sugar (for glaze)
  • 12 tbsp apple cider (for glaze)


Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream the softened butter and both sugars together until light and fluffy.
  3. Add the egg, vanilla extract, and apple cider, mixing until smooth.
  4. In a separate bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
  5. Add the dry ingredients to the wet mixture and mix until combined.
  6. Fold in the diced apples gently with a spatula.
  7. Scoop the dough onto the prepared baking sheet and bake for 10–12 minutes.
  8. Let the cookies cool, then drizzle with the apple cider glaze made from powdered sugar and apple cider.

Notes

For an added burst of flavor, use freshly grated nutmeg instead of pre-ground. Ensure the butter is at room temperature for better mixing.
