Soft and spiced cookies infused with the sweet flavor of apple cider, perfect for fall gatherings.
Ingredients
- 1 cup unsalted butter (softened)
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 1/4 cup apple cider
- 1 tsp vanilla extract
- 2 1/4 cups all-purpose flour
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 1 cup diced apples
- 1/2 cup powdered sugar (for glaze)
- 1–2 tbsp apple cider (for glaze)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream the softened butter with brown sugar and granulated sugar until light and fluffy.
- Add the egg, vanilla extract, and apple cider to the creamed mixture and mix until smooth.
- In another bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Gently fold in the diced apples.
- Scoop the dough onto the prepared baking sheet, spacing them out evenly. Bake for 10–12 minutes until the edges are lightly golden.
- Allow the cookies to cool completely before drizzling with the apple cider glaze made from powdered sugar and apple cider.
Notes
For chewy cookies, slightly underbake by a minute. Store cookies in an airtight container for up to a week, or freeze for up to 3 months.
