Description

Soft and spiced cookies infused with the sweet flavor of apple cider, perfect for fall gatherings.


Ingredients

  • 1 cup unsalted butter (softened)
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/4 cup apple cider
  • 1 tsp vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1 cup diced apples
  • 1/2 cup powdered sugar (for glaze)
  • 12 tbsp apple cider (for glaze)


Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream the softened butter with brown sugar and granulated sugar until light and fluffy.
  3. Add the egg, vanilla extract, and apple cider to the creamed mixture and mix until smooth.
  4. In another bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Gently fold in the diced apples.
  7. Scoop the dough onto the prepared baking sheet, spacing them out evenly. Bake for 10–12 minutes until the edges are lightly golden.
  8. Allow the cookies to cool completely before drizzling with the apple cider glaze made from powdered sugar and apple cider.

Notes

For chewy cookies, slightly underbake by a minute. Store cookies in an airtight container for up to a week, or freeze for up to 3 months.
