A delicious baked chicken dish featuring warm, sweet, and tart flavors from orange juice and cranberries.
Ingredients
- 8 bone-in, skin-on chicken thighs
- 1 cup fresh cranberries
- 1 cup freshly squeezed orange juice
- Zest of 1 orange
- 1/4 cup honey
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon soy sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- Optional: fresh rosemary sprigs for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- In a medium bowl, combine orange juice, zest, honey, minced garlic, olive oil, soy sauce, salt, and pepper. Whisk until honey is fully dissolved.
- Place the chicken thighs in a baking dish in a single layer.
- Pour the orange and honey mixture over the chicken thighs, ensuring they are well-coated.
- Scatter fresh cranberries around and over the chicken.
- Sprinkle dried thyme evenly over the chicken.
- Cover the baking dish with aluminum foil and bake for 20 minutes.
- Remove foil and bake for another 20–25 minutes, or until the chicken is cooked through and skin is golden and crispy at an internal temperature of 165°F (74°C).
- If needed, switch the oven to broil for 2–3 minutes at the end, watching carefully to avoid burning.
- Remove from oven and let the chicken rest for a few minutes.
- Optionally garnish with fresh rosemary sprigs before serving.
Notes
Pat the skin dry before baking for crispiness. Use fresh orange juice for the best flavor. Toss cranberries lightly to prevent sinking.
