Ingredients
- 2 pounds medium-sized beets
- 2 tablespoons extra virgin olive oil
- ½ cup balsamic vinegar
- 2 tablespoons maple syrup (or honey)
- 2 cloves garlic, minced
- 2 sprigs fresh thyme (optional)
- ½ teaspoon salt (or to taste)
- ¼ teaspoon black pepper, freshly ground
Instructions
- Preheat your oven to 400°F (200°C). Wash the beets and trim the greens, leaving about an inch of stem. Peeling is optional.
- Toss the beets with olive oil, salt, and pepper in a bowl. Add thyme if using.
- Spread the beets on a baking sheet and roast for 40-60 minutes until tender.
- While beets roast, combine balsamic vinegar, maple syrup (or honey), and minced garlic in a saucepan and bring to a gentle simmer.
- Lower the heat and let the mixture simmer for 10-15 minutes until it thickens.
- Once roasted, let beets cool slightly, peel if desired, and cut into wedges. Pour the balsamic glaze over and toss to coat.
- Serve warm or at room temperature, garnished with thyme if desired.
Notes
Store any leftovers in an airtight container in the refrigerator for 3-5 days. Reheat gently or serve cold.
