Description

A vibrant and healthy dish featuring roasted beets glazed with a tangy balsamic sauce, perfect as a side or in salads.


Ingredients

  • 2 pounds medium-sized beets
  • 2 tablespoons extra virgin olive oil
  • ½ cup balsamic vinegar
  • 2 tablespoons maple syrup (or honey)
  • 2 cloves garlic, minced
  • 2 sprigs fresh thyme (optional)
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon black pepper, freshly ground


Instructions

  1. Preheat your oven to 400°F (200°C). Wash the beets and trim the greens, leaving about an inch of stem. Peeling is optional.
  2. Toss the beets with olive oil, salt, and pepper in a bowl. Add thyme if using.
  3. Spread the beets on a baking sheet and roast for 40-60 minutes until tender.
  4. While beets roast, combine balsamic vinegar, maple syrup (or honey), and minced garlic in a saucepan and bring to a gentle simmer.
  5. Lower the heat and let the mixture simmer for 10-15 minutes until it thickens.
  6. Once roasted, let beets cool slightly, peel if desired, and cut into wedges. Pour the balsamic glaze over and toss to coat.
  7. Serve warm or at room temperature, garnished with thyme if desired.

Notes

Store any leftovers in an airtight container in the refrigerator for 3-5 days. Reheat gently or serve cold.
