Description
A light and fresh layer cake featuring soft cake, a rich mascarpone frosting, and topped with fresh berries for a sweet and clean dessert.
Ingredients
- 2 cups all-purpose flour
- 1 1/2 cups sugar
- 1/2 cup unsalted butter, softened
- 1 cup milk
- 3 large eggs
- 2 teaspoons baking powder
- 1 teaspoon vanilla extract
- 1 cup mixed fresh berries (strawberries, raspberries, blueberries)
- 1 cup mascarpone cheese
- 1 cup heavy whipping cream
- 1/4 cup powdered sugar
- Fresh berries for garnish
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the milk and vanilla extract.
- In a separate bowl, whisk together the flour and baking powder. Gradually add to the wet mixture until combined.
- Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then turn out onto a wire rack to cool completely.
- Prepare the mascarpone frosting by beating the mascarpone cheese and heavy cream in a bowl until soft peaks form. Add in powdered sugar and mix until well combined.
- Once the cakes are completely cool, place one layer on a serving plate. Spread half of the mascarpone frosting on top, then layer with mixed fresh berries.
- Place the second cake on top and repeat the frosting and berry layer.
- Frost the top and sides of the cake with the remaining mascarpone frosting and decorate with additional fresh berries.

Notes
Use fresh berries for best flavor. Cool the cakes fully before frosting.
