Ingredients
- 1 cup Biscoff cookie butter
- 1/2 cup softened butter
- 1 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- Additional Biscoff cookie butter for filling
- Sprinkles of sea salt for topping
Instructions
- Preheat the oven to 350°F (175°C).
- Cream together the Biscoff cookie butter and softened butter until smooth.
- Add brown sugar and granulated sugar, mixing until creamy.
- Beat in the egg and vanilla extract until well combined.
- In another bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Scoop out a tablespoon of dough, flatten it in your hand, and place a small amount of Biscoff cookie butter in the center. Wrap the dough around the filling to form a ball.
- Place the cookie balls on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Remove from the oven and sprinkle with sea salt.
- Let cool for a few minutes before transferring to a wire rack to cool completely.
Notes
Use softened butter for easier mixing and avoid overmixing the dough for soft cookies. Optional: add chocolate chips or nuts for extra flavor.
