Description

Delicious cookies with a unique flavor of Biscoff cookie butter, balanced with a sprinkle of sea salt.


Ingredients

  • 1 cup Biscoff cookie butter
  • 1/2 cup softened butter
  • 1 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • Additional Biscoff cookie butter for filling
  • Sprinkles of sea salt for topping


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the Biscoff cookie butter and softened butter until smooth.
  3. Add brown sugar and granulated sugar, mixing until creamy.
  4. Beat in the egg and vanilla extract until well combined.
  5. In another bowl, whisk together the flour, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Scoop out a tablespoon of dough, flatten it in your hand, and place a small amount of Biscoff cookie butter in the center. Wrap the dough around the filling to form a ball.
  8. Place the cookie balls on a baking sheet lined with parchment paper.
  9. Bake for 10-12 minutes or until the edges are lightly golden.
  10. Remove from the oven and sprinkle with sea salt.
  11. Let cool for a few minutes before transferring to a wire rack to cool completely.

Notes

Use softened butter for easier mixing and avoid overmixing the dough for soft cookies. Optional: add chocolate chips or nuts for extra flavor.
