Description

A delightful twist on classic cookies with a nutty flavor from browned butter, sweet marshmallows, and crunchy Rice Krispies, creating a treat that is soft and chewy.


Ingredients

  • 1 cup unsalted butter
  • 2 cups brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 cups Rice Krispies
  • 1 cup mini marshmallows


Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a saucepan, melt the butter over medium heat, swirling occasionally until it turns brown and has a nutty aroma. Remove from heat and let it cool slightly.
  3. In a mixing bowl, combine browned butter and brown sugar, mixing until smooth.
  4. Add the eggs and vanilla extract, mixing until well combined.
  5. In another bowl, whisk together flour, baking soda, and salt. Gradually add this to the wet ingredients, stirring until just combined.
  6. Fold in the Rice Krispies and mini marshmallows.
  7. Drop spoonfuls of dough onto the prepared baking sheet.
  8. Bake for 10-12 minutes or until the edges are golden brown.
  9. Allow to cool slightly before transferring to a wire rack to cool completely.

Notes

For extra flavor, add a pinch of cinnamon or chocolate chips. Store in an airtight container for up to a week.
