Ingredients
- 1 cup unsalted butter
- 2 cups brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3 cups Rice Krispies
- 1 cup mini marshmallows
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a saucepan, melt the butter over medium heat, swirling occasionally until it turns brown and has a nutty aroma. Remove from heat and let it cool slightly.
- In a mixing bowl, combine browned butter and brown sugar, mixing until smooth.
- Add the eggs and vanilla extract, mixing until well combined.
- In another bowl, whisk together flour, baking soda, and salt. Gradually add this to the wet ingredients, stirring until just combined.
- Fold in the Rice Krispies and mini marshmallows.
- Drop spoonfuls of dough onto the prepared baking sheet.
- Bake for 10-12 minutes or until the edges are golden brown.
- Allow to cool slightly before transferring to a wire rack to cool completely.
Notes
For extra flavor, add a pinch of cinnamon or chocolate chips. Store in an airtight container for up to a week.
