  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup white chocolate chunks (optional)

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, cream the softened butter and granulated sugar together until light and fluffy.
  3. Add the egg and vanilla extract to the bowl and mix until well combined and smooth.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry mixture to the wet ingredients, mixing until everything is combined.
  6. If desired, fold in the white chocolate chunks.
  7. Drop spoonfuls of dough onto the prepared baking sheet and flatten them slightly.
  8. Bake for 10 to 12 minutes or until the edges are golden brown.
  9. Allow the cookies to cool on the baking pan for 2 minutes, then transfer them to a wire rack to cool completely.
