Ingredients
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup light brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups chopped pecans
Instructions
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream together butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in eggs one at a time, then add vanilla extract.
- Whisk together flour, baking soda, and salt in a separate bowl.
- Gradually mix dry ingredients into the wet ingredients until just combined.
- Fold in chopped pecans.
- Refrigerate the dough for at least 1 hour (or up to 2 days) to chill and firm.
- Scoop rounded tablespoons of dough onto prepared baking sheets, spacing about 2 inches apart.
- Bake for 10–12 minutes, or until the edges are golden and centers are slightly soft.
- Cool on the baking sheet for 2 minutes, then transfer to a wire rack to cool completely.
Notes
Make sure your butter is softened for easier mixing. Don’t skip the chilling time to help the cookies hold their shape while baking.
