Description

A creamy and flavorful dish featuring chicken, rotini pasta, and a blend of cheeses, spiced with Cajun seasoning for a warm kick.


Ingredients

  • 1 pound Chicken Breasts
  • 8 ounces Rotini Pasta
  • 2 tablespoons Olive Oil
  • 1 tablespoon Cajun Seasoning
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • Salt to taste
  • Pepper to taste
  • 2 cloves Garlic, minced
  • 2 tablespoons Butter
  • 1 cup Heavy Cream
  • 1 cup Chicken Broth
  • 1 cup Mozzarella Cheese
  • ½ cup Parmesan Cheese
  • ½ cup Cheddar Cheese
  • ¼ cup Fresh Parsley, chopped


Instructions

  1. Cook the rotini pasta in boiling, salted water according to the package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Season chicken with Cajun seasoning, garlic powder, onion powder, salt, and pepper.
  3. Add chicken to the skillet and cook for about 6-7 minutes on each side until golden brown and cooked through. Remove chicken and let it rest before slicing into strips.
  4. In the same skillet, add butter. Once melted, add minced garlic and sauté for about 1 minute until fragrant.
  5. Pour in heavy cream and chicken broth. Stir and let simmer for 2-3 minutes.
  6. Add all cheeses (mozzarella, Parmesan, and cheddar) and mix until melted and smooth.
  7. Return sliced chicken and cooked pasta to skillet. Toss until evenly coated in the cheesy sauce.
  8. Serve warm, garnished with fresh parsley.

Notes

For a spicier kick, add more Cajun seasoning or a pinch of cayenne pepper. To make it lighter, use skim milk instead of heavy cream. You can customize by replacing chicken with shrimp or sausage.
