A creamy and flavorful dish featuring chicken, rotini pasta, and a blend of cheeses, spiced with Cajun seasoning for a warm kick.
Ingredients
- 1 pound Chicken Breasts
- 8 ounces Rotini Pasta
- 2 tablespoons Olive Oil
- 1 tablespoon Cajun Seasoning
- 1 teaspoon Garlic Powder
- 1 teaspoon Onion Powder
- Salt to taste
- Pepper to taste
- 2 cloves Garlic, minced
- 2 tablespoons Butter
- 1 cup Heavy Cream
- 1 cup Chicken Broth
- 1 cup Mozzarella Cheese
- ½ cup Parmesan Cheese
- ½ cup Cheddar Cheese
- ¼ cup Fresh Parsley, chopped
Instructions
- Cook the rotini pasta in boiling, salted water according to the package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Season chicken with Cajun seasoning, garlic powder, onion powder, salt, and pepper.
- Add chicken to the skillet and cook for about 6-7 minutes on each side until golden brown and cooked through. Remove chicken and let it rest before slicing into strips.
- In the same skillet, add butter. Once melted, add minced garlic and sauté for about 1 minute until fragrant.
- Pour in heavy cream and chicken broth. Stir and let simmer for 2-3 minutes.
- Add all cheeses (mozzarella, Parmesan, and cheddar) and mix until melted and smooth.
- Return sliced chicken and cooked pasta to skillet. Toss until evenly coated in the cheesy sauce.
- Serve warm, garnished with fresh parsley.
Notes
For a spicier kick, add more Cajun seasoning or a pinch of cayenne pepper. To make it lighter, use skim milk instead of heavy cream. You can customize by replacing chicken with shrimp or sausage.
