Ingredients
- 1 lb Andouille sausage
- 4 large Potatoes, diced
- 1 cup Vegetables (onions, bell peppers, and celery), chopped

- 1 cup Heavy cream
- 1 cup Cheddar cheese, shredded
- Salt, to taste
- Pepper, to taste
Instructions
- In a large pot, cook the andouille sausage over medium heat until browned.
- Add diced potatoes and chopped vegetables, cooking until softened.
- Stir in Cajun spices and season with salt and pepper.
- Pour in heavy cream and simmer until the soup thickens.
- Stir in cheddar cheese until melted.
