Ingredients
- 2 ½ cups all-purpose flour
- 1 tsp baking powder
- 2 tsp ground cinnamon
- 1 tsp ground cardamom
- ½ tsp ground ginger
- ½ tsp ground nutmeg
- ¼ tsp ground cloves
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 2 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk flour, baking powder, and chai spices together.
- In a separate bowl, cream butter and sugar until light and fluffy.
- Beat in the egg and vanilla extract until combined.
- Slowly mix in dry ingredients until dough forms.
- Chill dough for 30 minutes.
- Roll dough into 1-inch balls and place on prepared baking sheet.
- Bake 9–11 minutes, until edges are lightly golden.
- Cool completely, then drizzle with a chai glaze or serve plain.
Notes
- Chill dough for at least 30 minutes to prevent spreading.
- Add an extra egg yolk for chewier cookies.
- Sprinkle raw sugar on top before baking for a crunchy finish.
- Freeze cookie dough for up to 2 months.
