Description

Delightful and soft chewy sugar cookies perfect for any occasion.


Ingredients

  • 2 3/4 cups all-purpose flour
  • 2 teaspoons cornstarch
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup unsalted butter
  • 1 1/3 cups white sugar
  • 1 large egg
  • 1 large egg yolk
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon almond extract (optional)
  • 1/3 cup white sugar (for rolling)


Instructions

  1. Preheat the oven to 350°F (175°C) and line 2 cookie sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, cornstarch, baking soda, and salt.
  3. In a separate large bowl, beat together the butter and 1 1/4 cups sugar until fluffy.
  4. Beat in the egg, egg yolk, vanilla extract, and almond extract.
  5. With the mixer on low speed, beat the flour mixture into the butter mixture about 1/2 at a time.
  6. Pour the 1/3 cup sugar onto a plate.
  7. Form the dough into balls about 1 tablespoon in size. Roll each ball in the sugar and place 2 inches apart on the lined cookie sheet.
  8. Bake the cookies for 8-10 minutes, or until the tops look just set.
  9. Cool the cookies on the lined sheet for at least 10 minutes, then transfer to a wire rack to continue cooling.

Notes

Make sure your butter is at room temperature for easy mixing. Do not overmix the dough to keep the cookies soft and chewy.
