A delicious and healthy salad combining creaminess of avocado and feta with fresh vegetables, perfect for a light lunch or side dish.
Ingredients
- 1 can chickpeas, drained and rinsed
- 1 avocado, diced
- 1 cup feta cheese, crumbled
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 red onion, finely chopped
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh parsley, chopped (optional)
Instructions
- In a large bowl, combine the chickpeas, avocado, feta cheese, cherry tomatoes, cucumber, and red onion.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Garnish with fresh parsley if desired.
- Serve immediately.
