A cool treat featuring a crunchy cookie base, smooth ice cream layers, and delicious cookie dough chunks.
Ingredients
- 1 ½ cups chocolate chip cookies (about 20 cookies), crushed
- 5 tablespoons unsalted butter, melted
- 1.5 quarts vanilla ice cream, softened
- 1.5 quarts chocolate chip cookie dough ice cream, softened
- 1 cup all-purpose flour
- ½ cup brown sugar, packed
- ¼ cup granulated sugar
- ½ teaspoon salt
- ½ cup (1 stick) unsalted butter, softened
- ¾ cup mini chocolate chips (optional)
Instructions
- Prepare the cookie crust by combining crushed cookies and melted butter, then press into a 9-inch springform pan. Freeze for about 10 minutes.
- Soften vanilla ice cream for 10-15 minutes, then spread over the cookie crust. Freeze for 30-45 minutes until firm.
- In a bowl, mix flour, brown sugar, granulated sugar, salt, and softened butter to make dough chunks. Stir in mini chocolate chips if desired. Chill in the fridge.
- Once the vanilla layer is firm, spread chocolate chip cookie dough ice cream on top and freeze for another 30-45 minutes.
- Sprinkle cookie dough chunks over the top of the cake and freeze for at least 4 hours or overnight.
- Before serving, let the cake sit for 10 minutes, then slice and enjoy!
Notes
For best results, use softened ice cream and press the crust firmly. Chill dough bits well for better shaping.
