Description
Delicious brownies topped with fresh strawberries and smooth chocolate ganache, perfect for parties or as a sweet gift.
Ingredients
- 227 g unsalted butter
- 400 g granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 125 g all-purpose flour
- 85 g unsweetened cocoa powder
- 0.5 teaspoon salt
- 1 teaspoon baking powder
- 450 g fresh strawberries, hulled and halved
- 170 g semi-sweet chocolate chips
- 120 ml heavy cream
Instructions
- Preheat oven to 175°C. Grease and line a 23 x 33 cm baking pan with parchment paper.
- Melt butter in a large microwave-safe bowl and stir in sugar until glossy.
- Whisk in eggs individually, followed by vanilla extract.
- Sift together flour, cocoa powder, salt, and baking powder in a separate bowl. Fold into wet ingredients until just combined.
- Transfer batter to prepared pan, spreading evenly. Bake for 25–30 minutes, or until a toothpick comes out with moist crumbs. Cool completely in the pan.
- Hull and halve strawberries, arranging them cut side down on the cooled brownie surface.
- Combine chocolate chips and heavy cream in a saucepan or bowl. Heat in 30-second intervals, stirring until smooth.
- Pour ganache over strawberries, covering completely. Chill for at least 1 hour until set.
- Lift slab from pan using parchment and slice into squares to serve.
Notes
Use fresh, firm strawberries for best results. Do not over bake the brownies for a soft bite.
