Description

These soft chocolate cupcakes filled with fresh strawberries and topped with smooth chocolate ganache are the perfect sweet snack for any occasion.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 cup sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1 cup fresh strawberries, chopped
  • 1 cup chocolate chips
  • 1 cup heavy cream


Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large bowl, combine flour, cocoa powder, sugar, baking soda, and salt.
  3. Add the softened butter, eggs, vanilla extract, and milk, and mix until smooth.
  4. Fold in the chopped strawberries.
  5. Fill cupcake liners about 2/3 full with the batter and bake for 18-20 minutes, or until a toothpick comes out clean.
  6. Let the cupcakes cool completely.
  7. In a small saucepan, heat the heavy cream until just simmering. Remove from heat and add chocolate chips; stir until melted and smooth.
  8. Dip the tops of the cooled cupcakes in the chocolate ganache and let set.
  9. Top with additional strawberries if desired. Enjoy your delicious treats!

Notes

Serve at room temperature and can be stored in a sealed box or cake carrier for a few days. Use room temperature butter and eggs for the best results.
