Ingredients
- 1 ¾ cups all-purpose flour
- 1 ¾ cups granulated sugar
- ¾ cup unsweetened cocoa powder
- 1 ½ tsp baking powder
- 1 ½ tsp baking soda
- 1 tsp salt
- 2 large eggs
- 1 cup whole milk
- ½ cup vegetable oil
- 2 tsp vanilla extract
- 1 cup boiling water
- 1 ½ cups fresh strawberries
- 1 cup semi-sweet chocolate chips
- ½ cup heavy cream
- ½ cup butter
- 2 cups powdered sugar
Instructions
- Preheat the oven to 350°F. Line a cupcake tray with paper liners.
- In a large bowl, whisk the flour, sugar, cocoa powder, baking powder, baking soda, and salt until combined.
- In another bowl, mix the eggs, milk, oil, and vanilla until smooth.
- Pour the wet mixture into the dry mixture and stir until a thick batter forms.
- Carefully add boiling water and stir until smooth.
- Fill each cupcake liner about two thirds full with batter.
- Bake for about 20 minutes or until a toothpick comes out clean.
- Let cupcakes cool on a wire rack.
- Wash and dry strawberries, then set aside.
- Melt chocolate chips with heavy cream until smooth and shiny.
- Dip each strawberry halfway in the melted chocolate and place on parchment to set.
- For frosting, beat butter until creamy, then gradually add powdered sugar and vanilla until fluffy.
- Frost each cooled cupcake.
- Once chocolate is set, place one chocolate-covered strawberry on each cupcake.
- Drizzle leftover melted chocolate over cupcakes for garnish.
- Let sit for 10 minutes before serving.
Notes
Use ripe but firm strawberries for best results. Let cupcakes cool completely before frosting.
