Description

Delicious chocolate cupcakes topped with fresh strawberries dipped in chocolate, creating a delightful treat for any occasion.


Ingredients

  • 1 ¾ cups all-purpose flour
  • 1 ¾ cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1 ½ tsp baking powder
  • 1 ½ tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 1 ½ cups fresh strawberries
  • 1 cup semi-sweet chocolate chips
  • ½ cup heavy cream
  • ½ cup butter
  • 2 cups powdered sugar


Instructions

  1. Preheat the oven to 350°F. Line a cupcake tray with paper liners.
  2. In a large bowl, whisk the flour, sugar, cocoa powder, baking powder, baking soda, and salt until combined.
  3. In another bowl, mix the eggs, milk, oil, and vanilla until smooth.
  4. Pour the wet mixture into the dry mixture and stir until a thick batter forms.
  5. Carefully add boiling water and stir until smooth.
  6. Fill each cupcake liner about two thirds full with batter.
  7. Bake for about 20 minutes or until a toothpick comes out clean.
  8. Let cupcakes cool on a wire rack.
  9. Wash and dry strawberries, then set aside.
  10. Melt chocolate chips with heavy cream until smooth and shiny.
  11. Dip each strawberry halfway in the melted chocolate and place on parchment to set.
  12. For frosting, beat butter until creamy, then gradually add powdered sugar and vanilla until fluffy.
  13. Frost each cooled cupcake.
  14. Once chocolate is set, place one chocolate-covered strawberry on each cupcake.
  15. Drizzle leftover melted chocolate over cupcakes for garnish.
  16. Let sit for 10 minutes before serving.

Notes

Use ripe but firm strawberries for best results. Let cupcakes cool completely before frosting.
