Description

Delicious cupcakes topped with fresh chocolate-dipped strawberries, perfect for any occasion.


Ingredients

  • 1 and 3/4 cups all-purpose flour
  • 1 cup granulated sugar
  • 3/4 cup cocoa powder
  • 1 and 1/2 teaspoons baking powder
  • 1 and 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • Fresh strawberries
  • 6 ounces chocolate (for dipping)
  • Sprinkles (optional)


Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large bowl, mix together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, milk, oil, and vanilla extract to the dry ingredients, and beat on medium speed for about 2 minutes.
  4. Stir in the boiling water until the batter is well combined.
  5. Fill the cupcake liners about 2/3 full with the batter.
  6. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow the cupcakes to cool completely.
  8. Melt the chocolate in a microwave-safe bowl.
  9. Dip the fresh strawberries into the melted chocolate and let the excess drip off.
  10. Once the cupcakes are cool, top each with a chocolate-dipped strawberry.
  11. Add sprinkles if desired and serve.

Notes

Use room temperature eggs for a smooth mix. Do not overmix the batter. Cool the cupcakes fully before you add the fruit.
