Description
Delicious cupcakes combining rich chocolate and fresh strawberries, perfect for snacks or celebrations.
Ingredients
- 1 and 3/4 cups all-purpose flour
- 1 and 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup unsweetened cocoa powder
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup milk
- 1 cup fresh strawberries, chopped
- 1 cup chocolate frosting
- Extra strawberries for garnish
Instructions
- Preheat the oven to 350°F (175°C) and line a cupcake tin with liners.
- In a bowl, mix the flour, baking powder, salt, and cocoa powder. Set aside.
- In a large mixing bowl, beat the sugar and butter until light and fluffy. Add the eggs and vanilla, mixing until well combined.
- Gradually add the dry mixture to the wet mixture, alternating with milk and stirring until smooth.
- Gently fold in the chopped strawberries, being careful not to mash them.
- Fill each liner about two-thirds full with batter and bake for 18–20 minutes, testing with a toothpick to ensure it comes out clean.
- Allow the cupcakes to cool completely before frosting them with chocolate frosting and garnishing with a slice of strawberry.
Notes
Use fresh, firm strawberries for best results. Do not overmix the batter and allow cupcakes to cool completely before frosting.
