Description

A warm and bright cake perfect for the holidays, rich with toffee bits and a sweet, crunchy texture.


Ingredients

  • 2 cups All-Purpose Flour (or gluten-free flour blend)
  • 1 cup Unsalted Butter, softened
  • 1.5 cups Sugar (granulated or brown)
  • 3 large Eggs, room temperature
  • 2 teaspoons Vanilla Extract (or almond extract)
  • 2 teaspoons Baking Powder
  • 0.5 teaspoon Salt
  • 1 cup Toffee Bits (or chocolate/butterscotch chips)
  • 0.5 cup Chopped Nuts (pecans, walnuts, or omit)


Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch cake pan and set aside.
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, beat the softened butter and sugar until light and smooth.
  4. Add the eggs one at a time, beating well after each addition.
  5. Mix in the vanilla extract.
  6. Gradually add the dry ingredients to the wet mixture, stirring gently until smooth.
  7. Fold in the toffee bits and chopped nuts without over-mixing.
  8. Pour the batter into the greased pan and smooth the top.
  9. Bake for 30-40 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let the cake cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

For extra crunch, add some toffee bits on top before baking. Ensure to use room temperature ingredients for the best texture.
