Description

A comforting dish combining pasta, cooked chicken, and mixed vegetables in a warm cream sauce, reminiscent of pot pie.


Ingredients

  • 8 oz pasta of choice
  • 1 cup cooked chicken, shredded
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese


Instructions

  1. Cook the pasta according to package instructions; drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic; sauté until softened.
  3. Stir in the shredded chicken and frozen mixed vegetables; cook for a few minutes.
  4. Add the chicken broth, heavy cream, and thyme. Bring to a simmer.
  5. Mix in the cooked pasta and Parmesan cheese. Season with salt and pepper to taste.
  6. Serve warm, garnished with additional Parmesan if desired.

Notes

For variations, use turkey instead of chicken or half-and-half instead of heavy cream. Add more vegetables or cheese as preferred.
