Description

A delicious and comforting Coconut Chicken dish featuring tender chicken simmered in a rich coconut milk sauce, perfect for family dinners or gatherings.


Ingredients

  • 1 and 1/2 tbsp vegetable oil (or achiote oil)
  • 1 lb skinless chicken
  • 1 tsp ground paprika
  • 1 tsp ground cumin
  • 1/4 tsp ground coriander
  • 1/4 tsp achiote/annatto powder
  • Salt and pepper (to taste)
  • 1 medium yellow onion (minced)
  • 3 cloves garlic (minced)
  • 1 tomato (minced)
  • 1 tbsp tomato sauce or ketchup
  • 1/4 cup unsweetened shredded coconut
  • 1 can unsweetened canned coconut milk (room temperature)
  • 2 bay leaves
  • Cilantro (optional, chopped, for topping)


Instructions

  1. Heat oil in a skillet over medium heat. Season chicken with spices and cook until golden, about 5-6 minutes per side. Remove from skillet and set aside.
  2. In the same skillet, add oil, onion, garlic, and tomato. Sauté until softened, about 2-3 minutes. Add tomato sauce and cook for 1 minute.
  3. Add shredded coconut, cooking until fragrant, about 2-4 minutes.
  4. Lower heat, pour in coconut milk, and return chicken to skillet. Add bay leaves and simmer until sauce thickens, about 10-15 minutes.
  5. Serve topped with cilantro, warm with rice, patacones, or avocado.

Notes

For extra flavor, marinate chicken with spices for a few hours. Adjust spices to taste; add more paprika or chili powder for spice. Use unsweetened coconut milk for best results.
