Delicious cookies combining the rich flavors of cheesecake and salted caramel, perfect for any occasion.
Ingredients
- ¾ cup butter (softened)
- ⅓ cup sugar
- ⅓ cup brown sugar
- 2 eggs
- 2 tsp vanilla extract
- 1½ cup flour
- 1½ cup graham cracker (crushed)
- ½ tsp salt
- ¼ tsp baking soda
- ½ tsp baking powder
- ½ cup graham cracker (for rolling)
- 8 oz cream cheese (softened)
- 8 oz butter (softened)
- 2½ cups powdered sugar
- 2 tsp vanilla extract
- 1¼ cup brown sugar
- ½ cup whipping cream
- 5 tbsp butter
- 1 tbsp vanilla extract
- ¼ tsp salt
Instructions
- Preheat your oven to 350°F, line two baking sheets with parchment paper, and set aside.
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar. Add the vanilla extract and eggs, mixing well.
- Mix in the flour, salt, baking powder, and baking soda until everything is combined. Gradually add in 1½ cups of the crushed graham crackers and mix until just blended.
- Using a 2-inch cookie scoop, scoop the dough and roll it in the remaining crushed graham crackers. Place them on the lined cookie sheets and flatten the dough balls slightly until they are about ¾ of an inch thick.
- Bake one sheet at a time for 8-10 minutes, or until the edges are slightly golden brown. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire cooling rack to cool completely.
- For the frosting, beat together the softened cream cheese and butter in a mixing bowl until creamy. Gradually add the powdered sugar and vanilla extract, mixing until smooth.
- For the caramel topping, heat the brown sugar, whipping cream, and butter in a saucepan over medium heat. Stir until combined, then bring to a boil. Reduce heat and simmer for about 5 minutes. Remove from heat and let cool slightly.
- Once the cookies are cool, frost them with the cream cheese icing and drizzle the warm caramel topping over each cookie.
Notes
Store leftover cookies in an airtight container at room temperature for up to 5 days, or refrigerate for up to a week.
