A creamy and flavorful chicken and wild rice soup that’s quick to make and perfect for a cozy dinner.
Ingredients
- 2 cups cooked chicken, shredded
- 1 cup wild rice
- 1 medium onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 cups half-and-half or cream
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, sauté onion, carrots, celery, and garlic until softened.
- Add chicken broth, cooked chicken, wild rice, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer until rice is tender.
- Stir in half-and-half or cream and heat through.
- Serve hot, garnished with fresh parsley.
Notes
Use cooked chicken from a roast or rotisserie for convenience. Rinse the wild rice before cooking for best results.
