A hearty and flavorful soup made with Italian sausage, potatoes, and greens, perfect for chilly nights.
Ingredients
- 1 lb Italian sausage (mild or spicy)
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups potatoes, diced (Yukon Gold or Russet work best)
- 4 cups chicken broth
- 1 cup heavy cream (or half-and-half for a lighter option)
- 2 cups kale or spinach, chopped
- ½ tsp salt (adjust to taste)
- ½ tsp black pepper
- ¼ tsp crushed red pepper flakes (optional)
- 1 tbsp olive oil (if needed)
- ½ cup grated Parmesan cheese (for garnish)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the Italian sausage, breaking it apart with a spoon. Cook until browned. Add the diced onion and minced garlic. Sauté until the onion is translucent.
- Add the diced potatoes to the pot. Pour in the chicken broth and bring it to a boil. Lower the heat and let it simmer until the potatoes are tender, about 15-20 minutes.
- Stir in the heavy cream, chopped kale (or spinach), salt, black pepper, and red pepper flakes if using. Cook for another 5 minutes until the greens are wilted and everything is well combined.
- Ladle the soup into bowls and sprinkle with grated Parmesan cheese before serving.
Notes
This soup can be served hot with crusty bread or a side salad. It keeps well in the fridge for up to 3 days and can be frozen for 2-3 months.
