Description

A hearty and flavorful soup made with Italian sausage, potatoes, and greens, perfect for chilly nights.


Ingredients

  • 1 lb Italian sausage (mild or spicy)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups potatoes, diced (Yukon Gold or Russet work best)
  • 4 cups chicken broth
  • 1 cup heavy cream (or half-and-half for a lighter option)
  • 2 cups kale or spinach, chopped
  • ½ tsp salt (adjust to taste)
  • ½ tsp black pepper
  • ¼ tsp crushed red pepper flakes (optional)
  • 1 tbsp olive oil (if needed)
  • ½ cup grated Parmesan cheese (for garnish)


Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the Italian sausage, breaking it apart with a spoon. Cook until browned. Add the diced onion and minced garlic. Sauté until the onion is translucent.
  2. Add the diced potatoes to the pot. Pour in the chicken broth and bring it to a boil. Lower the heat and let it simmer until the potatoes are tender, about 15-20 minutes.
  3. Stir in the heavy cream, chopped kale (or spinach), salt, black pepper, and red pepper flakes if using. Cook for another 5 minutes until the greens are wilted and everything is well combined.
  4. Ladle the soup into bowls and sprinkle with grated Parmesan cheese before serving.

Notes

This soup can be served hot with crusty bread or a side salad. It keeps well in the fridge for up to 3 days and can be frozen for 2-3 months.
