Description

This cranberry orange bread is a festive holiday favorite with a perfect balance of tart cranberries and zesty orange. Moist, sweet, and simple to bake, it’s great for holiday breakfasts, desserts, or as a homemade gift.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 2 large eggs
  • ½ cup vegetable oil (or melted butter)
  • ¾ cup orange juice (freshly squeezed preferred)
  • 1 tbsp orange zest
  • 1 ½ cups fresh cranberries (or dried, soaked in juice for 10 min)


Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a loaf pan with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk eggs, oil, orange juice, and zest.
  4. Pour wet ingredients into dry ingredients and mix until just combined. Do not overmix.
  5. Fold in cranberries gently.
  6. Pour batter into prepared loaf pan.
  7. Bake for 50–60 minutes or until a toothpick inserted in the center comes out clean.
  8. Let cool for 15 minutes before removing from pan. Slice and enjoy!

Notes

  • For a glaze, mix 1 cup powdered sugar with 2 tbsp orange juice and drizzle over cooled bread.
  • Store in an airtight container at room temperature for 3 days, refrigerate for 1 week, or freeze up to 3 months.
  • You can substitute lemon zest for orange zest or add nuts like walnuts or pecans for extra flavor.
