Description

This dish mixes tart cranberries and sweet orange for a bright main dish that’s quick to prepare.


Ingredients

  • 4 chicken breasts
  • 1 cup fresh cranberries
  • 1 orange, juiced and zested
  • 1/4 cup honey
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon thyme (optional)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix orange juice, zest, honey, olive oil, salt, pepper, and thyme.
  3. Place chicken breasts in a baking dish and pour the mixture over them.
  4. Scatter fresh cranberries around the chicken.
  5. Bake for 25-30 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  6. Serve warm, garnished with additional orange zest if desired.

Notes

Use fresh orange juice for the best bright taste. You can freeze the cooked chicken in a freezer bag for up to 2 months.
