Description
A warm and comforting soup made with chicken, wild rice, cream, and fresh vegetables, perfect for a cozy meal.
Ingredients
- 2 cups shredded chicken
- 1 cup wild rice
- 4 cups chicken broth
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, sauté the onion, carrots, and celery over medium heat until softened.
- Add garlic and cook for another minute.
- Stir in the wild rice, chicken broth, and thyme.
- Bring to a boil, then reduce heat and simmer for about 45 minutes or until the rice is tender.
- Add the shredded chicken and heavy cream to the pot.
- Season with salt and pepper, and heat through.
- Serve hot, garnished with fresh parsley, alongside salad and crusty bread.
Notes
For a lighter version, use half-and-half instead of heavy cream. You can add mushrooms for extra flavor or a touch of lemon juice for brightness.
