Description

Delicious bars mixing oats, raspberries, and dark chocolate with a crumb crust.


Ingredients

  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup fresh raspberries
  • 1 cup dark chocolate chips


Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking dish.
  2. In a mixing bowl, combine oats, flour, brown sugar, granulated sugar, baking soda, and salt.
  3. Add the softened butter and mix until crumbly.
  4. Press about two-thirds of the mixture into the bottom of the prepared baking dish.
  5. Spread the raspberries evenly over the crumb base.
  6. Sprinkle the dark chocolate chips over the raspberries.
  7. Crumble the remaining oat mixture on top of the chocolate.
  8. Bake for 25-30 minutes until the top is golden brown.
  9. Allow to cool before cutting into bars.

Notes

Use ripe raspberries for the best taste. Press the base firm so the bars hold shape. Check at 25 minutes for doneness.
