Dark Chocolate Raspberry Truffles

Description

Decadent no bake truffles made with rich dark chocolate and tart raspberries, rolled in cocoa powder.


Ingredients

  • 8 oz (about 225 g) dark chocolate, chopped
  • 1/2 cup (120 ml) heavy cream
  • 1/4 cup fresh or frozen raspberries, mashed and strained
  • 2 tbsp unsweetened cocoa powder for dusting


Instructions

  1. Put chopped dark chocolate in a bowl.
  2. Heat the cream in a small pan until it just warms. Do not boil.
  3. Pour the hot cream over the chocolate. Let sit 1 minute.
  4. Stir the mix until smooth and shiny.
  5. Stir in the raspberry puree until the mix is even.
  6. Cover and chill the mix for 1 to 2 hours until firm.
  7. Scoop small spoonfuls and roll into balls with your hands.
  8. Toss the balls in cocoa powder to coat.
  9. Chill for 20 minutes more to set.

Notes

Allow truffles to sit at room temperature for 5 to 10 minutes before serving for a soft center. Store in the fridge up to 5 days or freeze up to 1 month.
