Description
Decadent no bake truffles made with rich dark chocolate and tart raspberries, rolled in cocoa powder.
Ingredients
- 8 oz (about 225 g) dark chocolate, chopped
- 1/2 cup (120 ml) heavy cream
- 1/4 cup fresh or frozen raspberries, mashed and strained
- 2 tbsp unsweetened cocoa powder for dusting
Instructions
- Put chopped dark chocolate in a bowl.
- Heat the cream in a small pan until it just warms. Do not boil.
- Pour the hot cream over the chocolate. Let sit 1 minute.
- Stir the mix until smooth and shiny.
- Stir in the raspberry puree until the mix is even.
- Cover and chill the mix for 1 to 2 hours until firm.
- Scoop small spoonfuls and roll into balls with your hands.
- Toss the balls in cocoa powder to coat.
- Chill for 20 minutes more to set.
Notes
Allow truffles to sit at room temperature for 5 to 10 minutes before serving for a soft center. Store in the fridge up to 5 days or freeze up to 1 month.
