Description
A warm and festive cake filled with fruits and nuts, perfect for winter gatherings.
Ingredients
- 300 g Mixed Dried Fruits (raisins, sultanas, or cherries)
- 150 g Nuts (almonds, walnuts, or pecans)
- 1 teaspoon Spices (cinnamon, nutmeg)
- 250 g Butter (unsalted or dairy-free spread)
- 3 large Eggs (room temperature)
- 200 g Flour (all-purpose or gluten-free)
- 200 g Brown Sugar (or coconut sugar)
- 1 teaspoon Baking Powder
- 100 g Apricot Jam (for brushing)
Instructions
- Preheat the oven to 160°C fan (or 180°C for a normal oven). Grease a deep round tin.
- In a big bowl, beat together the butter and sugar until light.
- Add eggs one at a time, mixing well after each addition.
- Sift in the flour and baking powder, folding gently into the mix.
- Stir in the spices, dried fruits, and nuts until evenly distributed.
- Spoon the mixture into the prepared tin and level the top.
- Bake for about 1 hour 30 minutes or until a skewer comes out clean. Cover with foil if the top browns too quickly.
- Warm the apricot jam and brush it over the warm cake to keep it moist.
Notes
Let the cake cool completely before cutting. Optionally brush with more warm jam for added shine. Store wrapped in cling film in a cool, dry place.
