Description
A delightful and easy-to-make yule log sheet cake, perfect for holiday celebrations.
Ingredients
- 4 large eggs
- 1/2 cup sugar
- 1/3 cup flour
- 2 tbsp cocoa powder
- 1 tsp baking powder
- Pinch of salt
- 1/2 cup heavy cream
- 2 tbsp powdered sugar
- 1/2 tsp vanilla
- 2 tbsp melted butter
- Cocoa powder for dusting
- Small sugared berries or mint for top (optional)
Instructions
- Heat oven to 350 F (175 C) and line a sheet pan with parchment paper.
- Whisk eggs and sugar in a bowl until light and thick.
- Fold in flour, cocoa, baking powder, and salt. Add melted butter and mix quickly but gently.
- Spread the batter in the pan in a thin layer and smooth the top.
- Bake for 8 to 12 minutes, or until the cake springs back when touched.
- Dust a clean towel with a little sugar, turn the warm cake onto the towel, and peel off the paper. Roll the cake in the towel from the short side and let cool while rolled.
- Whip the heavy cream, powdered sugar, and vanilla until soft peaks form.
- Unroll the cake, spread the cream in an even layer, and roll the cake again without the towel.
- Trim the ends and cut a small piece to place on the side as a branch. Dust the top with cocoa and make bark lines with a fork or knife. Add berries or mint if desired.
- Chill for one hour before serving.
Notes
Roll the cake while warm to avoid cracks and chill before cutting for clean slices.
