Description

A delightful and easy-to-make yule log sheet cake, perfect for holiday celebrations.


Ingredients

  • 4 large eggs
  • 1/2 cup sugar
  • 1/3 cup flour
  • 2 tbsp cocoa powder
  • 1 tsp baking powder
  • Pinch of salt
  • 1/2 cup heavy cream
  • 2 tbsp powdered sugar
  • 1/2 tsp vanilla
  • 2 tbsp melted butter
  • Cocoa powder for dusting
  • Small sugared berries or mint for top (optional)


Instructions

  1. Heat oven to 350 F (175 C) and line a sheet pan with parchment paper.
  2. Whisk eggs and sugar in a bowl until light and thick.
  3. Fold in flour, cocoa, baking powder, and salt. Add melted butter and mix quickly but gently.
  4. Spread the batter in the pan in a thin layer and smooth the top.
  5. Bake for 8 to 12 minutes, or until the cake springs back when touched.
  6. Dust a clean towel with a little sugar, turn the warm cake onto the towel, and peel off the paper. Roll the cake in the towel from the short side and let cool while rolled.
  7. Whip the heavy cream, powdered sugar, and vanilla until soft peaks form.
  8. Unroll the cake, spread the cream in an even layer, and roll the cake again without the towel.
  9. Trim the ends and cut a small piece to place on the side as a branch. Dust the top with cocoa and make bark lines with a fork or knife. Add berries or mint if desired.
  10. Chill for one hour before serving.

Notes

Roll the cake while warm to avoid cracks and chill before cutting for clean slices.
