Description

A quick and comforting one-pot meal loaded with cheesy goodness and bold taco flavors, perfect for busy weeknights.


Ingredients

  • 8 oz Pasta (mafaldine, fusilli, or elbow macaroni)
  • 2 cups Chicken Broth (low-sodium)
  • 1 lb Ground Beef (extra lean)
  • 1 medium Onion (chopped)
  • 2 cloves Garlic (minced)
  • 2 tbsp Taco Seasoning (store-bought or homemade)
  • 1 cup Enchilada Sauce (or salsa)
  • 2 cups Mozzarella Cheese (shredded)
  • 1 cup Cheddar Cheese (shredded)
  • 2 tbsp Parsley (fresh, chopped)


Instructions

  1. In a large pot, bring the chicken broth to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
  2. In the same pot, cook the ground beef over medium heat until it is browned. Drain any excess fat.
  3. Stir in the chopped onion and minced garlic. Cook for about 3-4 minutes until the onion is translucent. Add the taco seasoning and mix well.
  4. Pour in the enchilada sauce and cooked pasta into the pot. Mix until everything is well combined and heated through.
  5. Stir in the mozzarella and cheddar cheese until melted and creamy.
  6. Sprinkle with fresh parsley before serving.

Notes

For added spice, use spicy taco seasoning or add chopped jalapeños. Substitute ground beef with ground turkey or chicken for a healthier option. For a creamier texture, add a splash of heavy cream or cream cheese.
