A quick and comforting one-pot meal loaded with cheesy goodness and bold taco flavors, perfect for busy weeknights.
Ingredients
- 8 oz Pasta (mafaldine, fusilli, or elbow macaroni)
- 2 cups Chicken Broth (low-sodium)
- 1 lb Ground Beef (extra lean)
- 1 medium Onion (chopped)
- 2 cloves Garlic (minced)
- 2 tbsp Taco Seasoning (store-bought or homemade)
- 1 cup Enchilada Sauce (or salsa)
- 2 cups Mozzarella Cheese (shredded)
- 1 cup Cheddar Cheese (shredded)
- 2 tbsp Parsley (fresh, chopped)
Instructions
- In a large pot, bring the chicken broth to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
- In the same pot, cook the ground beef over medium heat until it is browned. Drain any excess fat.
- Stir in the chopped onion and minced garlic. Cook for about 3-4 minutes until the onion is translucent. Add the taco seasoning and mix well.
- Pour in the enchilada sauce and cooked pasta into the pot. Mix until everything is well combined and heated through.
- Stir in the mozzarella and cheddar cheese until melted and creamy.
- Sprinkle with fresh parsley before serving.
Notes
For added spice, use spicy taco seasoning or add chopped jalapeños. Substitute ground beef with ground turkey or chicken for a healthier option. For a creamier texture, add a splash of heavy cream or cream cheese.
