Description

A light and fresh snack made with oats, cream cheese, and real berries, perfect for a quick sweet treat.


Ingredients

  • 2 cups Rolled Oats (or quick oats)
  • 1 cup Almond Flour
  • 8 oz Cream Cheese (softened)
  • 1 cup Greek Yogurt (or plant-based yogurt)
  • 1/4 cup Honey or Maple Syrup (adjust to taste)
  • 1 cup Blueberries (fresh or frozen)
  • 1 tsp Vanilla Extract (optional)
  • 1/4 tsp Salt
  • 1/2 cup Melted White Chocolate (optional)


Instructions

  1. Put the oats and almond flour in a bowl. Mix them well.
  2. In a second bowl, beat the softened cream cheese until smooth.
  3. Add the yogurt, honey, vanilla, and salt to the cheese. Mix until soft.
  4. Fold the dry mix into the wet mix. Stir until the mix comes together.
  5. Gently fold in the blueberries so they spread through the mix.
  6. Spoon the mix into small paper cups or a muffin pan. Press down lightly.
  7. If you like, melt the white chocolate and drizzle a little on each bite.
  8. Chill the bites in the fridge for at least 1 hour. This helps them set.
  9. Serve cold and enjoy.

Notes

Use room temperature cream cheese for smooth blending. Thaw and drain frozen berries first to avoid excess water.
