Description

A rich and soft cake combining dark chocolate flavor with tart cherries, perfect for any occasion.


Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 3/4 cups sugar
  • 3/4 cup cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup cherries, pitted and chopped
  • 1 cup chocolate ganache (for topping)


Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add eggs, milk, oil, and vanilla to the dry ingredients. Mix with a handheld mixer on medium speed for 2 minutes.
  4. Stir in the boiling water until combined (the batter will be thin).
  5. Fold in the chopped cherries.
  6. Pour the batter evenly into the prepared cake pans.
  7. Bake for 30-35 minutes, or until a toothpick inserted comes out clean.
  8. Allow cakes to cool before removing from pans.
  9. Once cooled, top with chocolate ganache. Enjoy your cake!

Notes

Serve with cream or ice cream for an added treat. Store in the refrigerator for up to 4 days, or freeze for up to 1 month.
