Description
A simple and fast pasta dish cooked in one pot with fresh tomatoes, cream, and pasta, resulting in a soft, smooth, and creamy sauce.
Ingredients
- 8 ounces pasta (penne or fettuccine)
- 2 cups fresh tomatoes, chopped
- 3 cloves garlic, minced
- 1 cup heavy cream
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh basil for garnish (optional)
- Grated Parmesan cheese for serving (optional)
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the chopped fresh tomatoes and cook for 5 minutes, until they start to soften.
- Pour in the heavy cream and season with salt and pepper.
- Stir in the pasta and enough water (or broth) to cover the pasta.
- Bring to a boil, then reduce heat to simmer.
- Cook for about 10-12 minutes, stirring occasionally, until pasta is tender and the sauce has thickened.
- Serve hot, garnished with fresh basil and grated Parmesan cheese if desired.
Notes
For a spicier note, cook a small bit of sausage at the beginning. You can add cooked chicken or shrimp for more protein, and spinach in the last 2 minutes of cook time.
