Description

A simple and fast pasta dish cooked in one pot with fresh tomatoes, cream, and pasta, resulting in a soft, smooth, and creamy sauce.


Ingredients

  • 8 ounces pasta (penne or fettuccine)
  • 2 cups fresh tomatoes, chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)
  • Grated Parmesan cheese for serving (optional)


Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the chopped fresh tomatoes and cook for 5 minutes, until they start to soften.
  4. Pour in the heavy cream and season with salt and pepper.
  5. Stir in the pasta and enough water (or broth) to cover the pasta.
  6. Bring to a boil, then reduce heat to simmer.
  7. Cook for about 10-12 minutes, stirring occasionally, until pasta is tender and the sauce has thickened.
  8. Serve hot, garnished with fresh basil and grated Parmesan cheese if desired.

Notes

For a spicier note, cook a small bit of sausage at the beginning. You can add cooked chicken or shrimp for more protein, and spinach in the last 2 minutes of cook time.
