Description
A soft and sweet cheesecake topped with fresh strawberries, perfect for family treats and gatherings.
Ingredients
- 8 oz cream cheese, softened
- 1/2 cup sugar
- 1 tsp vanilla extract
- 1 cup heavy cream
- 1 cup strawberries, pureed
- 1 cup graham cracker crumbs
- 1/4 cup melted butter
- Fresh strawberries for topping
Instructions
- Preheat oven to 325°F (160°C).
- In a mixing bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
- In another bowl, mix the softened cream cheese, sugar, and vanilla until smooth.
- Gradually add the heavy cream and pureed strawberries to the cream cheese mixture, beating until well combined.
- Pour the cheesecake filling over the crust in the springform pan.
- Bake for 45-50 minutes, or until the center is set.
- Let it cool at room temperature, then refrigerate for at least 4 hours.
- Top with fresh strawberries before serving.
Notes
Use room temperature cream cheese for a smoother mix. Chill long enough so that the cake firms up well.
