Description

A soft and sweet cheesecake topped with fresh strawberries, perfect for family treats and gatherings.


Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1 cup heavy cream
  • 1 cup strawberries, pureed
  • 1 cup graham cracker crumbs
  • 1/4 cup melted butter
  • Fresh strawberries for topping


Instructions

  1. Preheat oven to 325°F (160°C).
  2. In a mixing bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
  3. In another bowl, mix the softened cream cheese, sugar, and vanilla until smooth.
  4. Gradually add the heavy cream and pureed strawberries to the cream cheese mixture, beating until well combined.
  5. Pour the cheesecake filling over the crust in the springform pan.
  6. Bake for 45-50 minutes, or until the center is set.
  7. Let it cool at room temperature, then refrigerate for at least 4 hours.
  8. Top with fresh strawberries before serving.

Notes

Use room temperature cream cheese for a smoother mix. Chill long enough so that the cake firms up well.
