Description

A quick and easy weeknight dinner featuring tender chicken, rich creamy sauce, and Cajun spices, ready in about 30 minutes.


Ingredients

  • 2 boneless, skinless chicken breasts, sliced or cubed
  • 1 tablespoon Cajun seasoning blend
  • 8 ounces fettuccine or preferred pasta
  • 1 cup heavy cream or half-and-half
  • 1 cup freshly grated Parmesan cheese


Instructions

  1. Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions (8-12 minutes) until al dente. Drain, reserving some cooking liquid.
  2. In a large skillet, heat a drizzle of olive oil over medium-high heat. Cook the chicken with Cajun seasoning until no longer pink (about 6-8 minutes).
  3. Reduce heat to medium-low, add heavy cream, and whisk in Parmesan cheese. Simmer until sauce thickens.
  4. Add cooked pasta to the skillet and toss until evenly coated with sauce. Thin with reserved cooking liquid if necessary.

Notes

Optionally, let the chicken marinate in Cajun seasoning for 30 minutes before cooking for extra flavor. Pairs well with a green salad or crusty bread.
