Description

A comforting and nutritious white bean soup packed with flavor and perfect for any season.


Ingredients

  • 1 can white beans (cannellini or great northern)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 carrot, diced
  • 2 stalks celery, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 cups spinach or kale
  • Olive oil


Instructions

  1. In a large pot, heat a splash of olive oil over medium heat.
  2. Add the chopped onion, carrot, and celery. Sauté until the vegetables are softened, about 5-7 minutes.
  3. Add the minced garlic and sauté for another minute.
  4. Pour in the vegetable broth and bring to a boil.
  5. Stir in the white beans, thyme, rosemary, salt, and pepper. Reduce heat and let simmer for 15-20 minutes.
  6. Add spinach or kale and cook until wilted.
  7. Adjust seasoning if necessary and serve hot.

Notes

For added richness, consider blending a portion of the soup for a creamier texture. You can also add other vegetables like zucchini or bell pepper to customize your soup.
