Description

Delightful cookies combining gingerbread and creamy cheesecake, perfect for the holiday season.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/4 cup molasses
  • 1 teaspoon vanilla extract
  • 1 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • Spiced sugar for rolling (sugar mixed with cinnamon and ginger)


Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt.
  3. In a separate large bowl, beat the butter, brown sugar, and granulated sugar until creamy.
  4. Add the egg, molasses, and vanilla extract, mixing until combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  6. In another bowl, beat the cream cheese and powdered sugar until smooth for the filling.
  7. Take a small amount of dough, flatten it in your hand, place a spoonful of cheesecake filling in the center, then wrap the dough around the filling to form a ball.
  8. Roll each ball in spiced sugar and place on the prepared baking sheet.
  9. Bake for 10-12 minutes or until the edges are firm. Allow cooling before serving.

Notes

Ensure butter and cream cheese are at room temperature for easy mixing. Don’t skip the spiced sugar rolling; it adds great flavor.
