Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 1/4 cup molasses
- 1 teaspoon vanilla extract
- 1 cup cream cheese, softened
- 1/4 cup powdered sugar
- Spiced sugar for rolling (sugar mixed with cinnamon and ginger)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt.
- In a separate large bowl, beat the butter, brown sugar, and granulated sugar until creamy.
- Add the egg, molasses, and vanilla extract, mixing until combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
- In another bowl, beat the cream cheese and powdered sugar until smooth for the filling.
- Take a small amount of dough, flatten it in your hand, place a spoonful of cheesecake filling in the center, then wrap the dough around the filling to form a ball.
- Roll each ball in spiced sugar and place on the prepared baking sheet.
- Bake for 10-12 minutes or until the edges are firm. Allow cooling before serving.
Notes
Ensure butter and cream cheese are at room temperature for easy mixing. Don’t skip the spiced sugar rolling; it adds great flavor.
