Description

A wholesome and flavorful Greek Chicken Casserole made with lean chicken, fresh vegetables, olive oil, and herbs. Perfect for weeknight dinners, healthy meal prep, or big-batch cooking.


Ingredients

  • 2 lbs chicken breast, cut into bite-sized pieces
  • 1 red onion, sliced
  • 1 zucchini, chopped
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 2 cups cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 3 tbsp olive oil
  • 1 lemon (juice + zest)
  • 1 tsp dried oregano (or 1 tbsp fresh)
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup crumbled feta cheese
  • 2 cups cooked quinoa or brown rice (optional, for serving)


Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13 baking dish.
  2. In a large bowl, combine chicken, olive oil, garlic, lemon juice, oregano, salt, and pepper. Toss well.
  3. Add zucchini, bell peppers, onions, and cherry tomatoes. Mix to coat.
  4. Transfer mixture into the prepared baking dish.
  5. Sprinkle feta cheese evenly over the top.
  6. Bake uncovered for 35–40 minutes, until chicken is cooked through and vegetables are tender.
  7. Remove from oven, let rest for 5 minutes, then serve warm. Optionally, serve over quinoa or brown rice for a complete meal.
