Description
A wholesome and flavorful Greek Chicken Casserole made with lean chicken, fresh vegetables, olive oil, and herbs. Perfect for weeknight dinners, healthy meal prep, or big-batch cooking.
Ingredients
- 2 lbs chicken breast, cut into bite-sized pieces
- 1 red onion, sliced
- 1 zucchini, chopped
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 2 cups cherry tomatoes, halved
- 3 cloves garlic, minced
- 3 tbsp olive oil
- 1 lemon (juice + zest)
- 1 tsp dried oregano (or 1 tbsp fresh)
- ½ tsp salt
- ½ tsp black pepper
- 1 cup crumbled feta cheese
- 2 cups cooked quinoa or brown rice (optional, for serving)
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13 baking dish.
- In a large bowl, combine chicken, olive oil, garlic, lemon juice, oregano, salt, and pepper. Toss well.
- Add zucchini, bell peppers, onions, and cherry tomatoes. Mix to coat.
- Transfer mixture into the prepared baking dish.
- Sprinkle feta cheese evenly over the top.
- Bake uncovered for 35–40 minutes, until chicken is cooked through and vegetables are tender.
- Remove from oven, let rest for 5 minutes, then serve warm. Optionally, serve over quinoa or brown rice for a complete meal.
