Ingredients
- 1 lb chicken breasts
- 8 cups chicken broth
- 1 cup orzo or rice
- 3 large eggs
- 1/2 cup fresh lemon juice

- 1 cup chopped celery
- 1 onion, diced
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, sauté onion, garlic, carrots, and celery until softened.
- Add chicken and broth; bring to a boil.
- Stir in orzo or rice and simmer until cooked through.
- In a bowl, whisk eggs and lemon juice until smooth.
- Gradually add some broth to the egg mixture to temper it, then slowly stir it back into the pot.
