Description

A comforting soup with bright lemon flavor and creamy texture, perfect for chilly days or when feeling under the weather.


Ingredients

  • 1 lb chicken breasts
  • 8 cups chicken broth
  • 1 cup orzo or rice
  • 3 large eggs
  • 1/2 cup fresh lemon juice
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. In a large pot, sauté onion, garlic, carrots, and celery until softened.
  2. Add chicken and broth; bring to a boil.
  3. Stir in orzo or rice and simmer until cooked through.
  4. In a bowl, whisk eggs and lemon juice until smooth.
  5. Gradually add some broth to the egg mixture to temper it, then slowly stir it back into the pot.
  6. Adjust seasoning with salt and pepper.
  7. Serve hot, garnished with fresh parsley.
