Description

A refreshing and light pudding made with almond milk and chia seeds, perfect for a quick breakfast or snack.


Ingredients

  • 1 cup almond milk
  • 1/4 cup chia seeds
  • 1 cup fresh blueberries
  • 2 tablespoons maple syrup or honey
  • 1/2 teaspoon vanilla extract
  • Coconut cream (optional, for topping)


Instructions

  1. In a bowl, whisk together almond milk, chia seeds, maple syrup (or honey), and vanilla extract.
  2. Stir in the blueberries gently.
  3. Cover and refrigerate for at least 4 hours or overnight until the chia seeds have expanded and the pudding has thickened.
  4. Serve chilled, topped with coconut cream if desired.

Notes

Stir the pudding before serving if it looks watery on top. Keep in fridge for up to 4 days.
