Description
A warm and comforting soup combining sausage, fresh cabbage, and tender potatoes, perfect for chilly days.
Ingredients
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 pound sausage (smoked or kielbasa), sliced
- 4 cups cabbage, chopped
- 4 medium potatoes, diced
- 4 cups chicken or vegetable broth
- 1 teaspoon thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
- Add sliced sausage and cook until browned.
- Stir in the chopped cabbage and diced potatoes, and cook for a few minutes.
- Pour in the broth, add thyme, and season with salt and pepper.
- Bring to a boil, then reduce heat and let simmer for about 30 minutes, or until the potatoes are tender.
- Taste and adjust seasoning if needed before serving.
Notes
Serve hot with crusty bread or crackers. Can add fresh herbs for extra flavor.
