A warm and comforting soup combining sausage, fresh cabbage, and tender potatoes, perfect for chilly days.

Ingredients

  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 pound sausage (smoked or kielbasa), sliced
  • 4 cups cabbage, chopped
  • 4 medium potatoes, diced
  • 4 cups chicken or vegetable broth
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
  2. Add sliced sausage and cook until browned.
  3. Stir in the chopped cabbage and diced potatoes, and cook for a few minutes.
  4. Pour in the broth, add thyme, and season with salt and pepper.
  5. Bring to a boil, then reduce heat and let simmer for about 30 minutes, or until the potatoes are tender.
  6. Taste and adjust seasoning if needed before serving.

Notes
