Description

A warm and bright cake filled with spices, perfect for cold days and the holiday season. This cake looks festive and delicious on any holiday table.


Ingredients

  • 2 cups All-Purpose Flour (or gluten-free flour blend)
  • 2 teaspoons Baking Powder
  • 1 teaspoon Baking Soda
  • 2 teaspoons Cinnamon
  • 1 teaspoon Nutmeg
  • 1 teaspoon Ginger
  • 1 teaspoon Salt
  • 1 cup Unsalted Butter (or margarine)
  • 1 cup Granulated Sugar
  • 4 large Eggs (or flax eggs)
  • 2 teaspoons Vanilla Extract
  • 1 cup Buttermilk (or yogurt)
  • 3 cups Powdered Sugar
  • 1 cup Heavy Cream (or coconut cream)


Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch pan and line the bottom with paper.
  2. Sift together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt in a bowl.
  3. In another bowl, beat the butter and sugar until light. Add the eggs one at a time and mix in vanilla.
  4. Add the dry mix in parts and stir gently. Incorporate the buttermilk gradually until smooth.
  5. Pour batter into the pan and tap to remove air bubbles.
  6. Bake for 35-45 minutes, testing with a toothpick until it comes out clean.
  7. Let the cake cool in the pan for 10 minutes, then transfer to a rack to cool fully.
  8. For frosting, beat powdered sugar and heavy cream until thick. Spread on the cooled cake.
  9. Garnish with nuts, fruit, or sugar dust as desired.
