Ingredients
- 2 cups All-Purpose Flour (or gluten-free flour blend)
- 2 teaspoons Baking Powder
- 1 teaspoon Baking Soda
- 2 teaspoons Cinnamon
- 1 teaspoon Nutmeg
- 1 teaspoon Ginger
- 1 teaspoon Salt
- 1 cup Unsalted Butter (or margarine)
- 1 cup Granulated Sugar
- 4 large Eggs (or flax eggs)
- 2 teaspoons Vanilla Extract
- 1 cup Buttermilk (or yogurt)
- 3 cups Powdered Sugar
- 1 cup Heavy Cream (or coconut cream)
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9-inch pan and line the bottom with paper.
- Sift together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt in a bowl.
- In another bowl, beat the butter and sugar until light. Add the eggs one at a time and mix in vanilla.
- Add the dry mix in parts and stir gently. Incorporate the buttermilk gradually until smooth.
- Pour batter into the pan and tap to remove air bubbles.
- Bake for 35-45 minutes, testing with a toothpick until it comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer to a rack to cool fully.
- For frosting, beat powdered sugar and heavy cream until thick. Spread on the cooled cake.
- Garnish with nuts, fruit, or sugar dust as desired.
