Description

A simple and rewarding recipe for making fresh homemade pasta from scratch.


Ingredients

  • 2 cups (240g) all-purpose flour, spooned & leveled
  • 3 large eggs
  • ½ tsp sea salt
  • ½ Tbsp extra-virgin olive oil


Instructions

  1. On a clean surface, pile the flour and form a well in the center. Add eggs, olive oil, and salt into the well.
  2. Use a fork to slowly incorporate the flour into the eggs, then mix with your hands until a shaggy dough forms.
  3. Knead the dough for 8–10 minutes until it feels smooth. If it’s too dry, add a few drops of water; if it’s too sticky, dust it with a little flour.
  4. Shape the dough into a ball, wrap it in plastic wrap, and let it rest for 30 minutes at room temperature.
  5. Cut the dough into 4 equal pieces. Flatten one piece into a small oval shape.
  6. Pass the flattened dough through a pasta machine on setting 1 three times. Fold it into thirds, then roll it again through settings 2 and 3 three times each. Finally, run it once through settings 4, 5, and 6.
  7. Lay the rolled sheets on a floured baking sheet, dust them with flour, and fold them lightly. Repeat with the remaining pieces of dough.
  8. Use a cutter to shape the pasta as you like (e.g., fettuccine).
  9. Boil the pasta in salted water for 1–2 minutes until it reaches al dente. Drain and serve immediately.
